Grilling

This is a fast method of cooking by radiant heat and is also sometimes known as broiling. The advantages are: speed of grilling enables food to be quickly cooked to order; charring foods gives a distinctive appearance and improves flavor; and control of cooking is aided because food is visible during grilling.
